Every year, seeing all the new vegan mince pies becoming more easily available is one of the little things that make me so happy. This year especially, I've spotted "accidentally vegan", very affordable mince pies in both Lidl, Greggs and most other major supermarkets here in the UK.
However, there's something so comforting and christmassy about making your own each year and it's a lot easier than you might think!
My go-to recipe isn't much of a recipe at all because it only requires 3 ingredients - yes you read that right.
The secret ingredient is store-bought pastry. Yes, the best-tasting pastries are the homemade ones but sometimes ready made sheets can save us a lot of time (and mess too!)
Lots of supermarket ready-rolled pastry don't use butter so are accidentally vegan! For these, I used Jus-Rol which know you can find in Sainsbury's and Tesco.
Three-Ingredient Mince Pies
You will need:
1 sheet of Jus-rol shortcrust pastry
1 jar store-bought mincemeat (just check it's vegan friendly. I use this one)
1 tbsp soy milk
1tbsp coconut oil for greasing
Circle cookie cutter
Star shaped cookie cutter for topping
shallow baking tray
Method:
Preheat your oven to 200 degrees celsius (180 degrees fan) and grease the inside of your shallow baking tin with the coconut oil.
Roll out your pastry sheet
Using your cookie cutter, cut out twelve circles and twelve stars for the tops
Delicately push the circles into the baking tray holes so it lightly takes the shape of the tarts
Scoop in a heaped tsp of mince meat (being careful not to overfill them like I did haha)
Place a pastry star on top of each tart
Brush the tops with a little soya milk to glaze them
Bake in the oven for 20-25 minutes until slightly browned on top
Dust the tops with icing sugar before serving (optional) and enjoy them hot or cold.
